I’m always looking for things to cook that don’t take a lot of prep work! I also love the crock pot because when I get home, dinner is just READY! I was looking through the “organic” section at Safeway because they have really stepped up their game on quality products! I found this Cucina Antica Tuscany Pumpkin sauce. The label mostly says to use it with pasta, which I don’t eat, but I thought I could turn it into something yummy! I’ll tell you right now this sauce is not TECHNICALLY paleo (it has heavy cream in it)! GASP! However, I felt like it had minimal ingredients and I was ok with it! You can see the nutrition facts and ingredients here. This meal took me all of 5 minutes to prepare and after a days work, it was ready! It’s kind of soupy – you can also add chicken stock to make it more soupy if you want. I ate it just as is, but you could also eat it with rice, quinoa, or pasta if you’re splurging!
- Chicken Thighs
- 1 can Coconut Milk
- 1 jar Cucina Antica Tuscany Pumpkin sauce
- In your crock pot, mix together the coconut milk and the pumpkin sauce
- Add the chicken thighs
- Mix the chicken around in the sauce so it’s covered
- Cover and cook on low for 6-8 hours
