For Christmas I got a Paleo cookbook called Everyday Paleo and I LOVE IT!! I also found the author Sarah Fragoso has a supporting website www.everydaypaleo.com. This has been a great support for me during this journey! This meal I made last night was Patrick’s favorite so far and I agree…it was AWESOME!!
A few days ago she had a post for “Beyond Easy Pulled Pork“. Here are the notes on the things I slightly altered:
- 4-5 lb pork butt roast – I used a pork shoulder
- 2 yellow onions, sliced
- 3 tbsps chili powder
- 1 tsp coriander
- 2 tsps cumin
- 2 tsps onion powder – in addition I added garlic powder
- 1 tablespoon dried parsley – I used an Italian Herb blend
- ¼ teaspoon chipotle powder – I didn’t have this, so I used cinnamon
- 2 tsps sea salt
I followed the instructions for cooking, but I put mine on low for 8 hours…since I was going to be gone at work all day and that worked GREAT!
After the pork was cooked I just chopped up some red onion and cilantro and topped the meat with this and some homemade guacamole in a piece of bib lettuce!
I ate these with a purple cabbage slaw, which I also took and did a variation from Everyday Paleo!
